Wine experts always say that the wine quality is created in the vineyard and is subsequently refined in the winery. Our rocky soils, manured with naturally and basically poor products and substances, do not ensure large production, albeit always obtained with particularly healthy grapes. This is the reason why we produce genuine and high quality wine. The genuineness of our wines is ensured by the strictly organic farming of our vineyards (E.U. regulation no. 2078, Measure A2). Our grape varieties range from the traditional Sangiovese, Trebbiano, Canaiolo Nero and Malvasia, of which we preserve the original clones, to the most reeent ones such as Cabernet Sauvignon and Merlot for red wines and Chardonnay and Sauvignon for white wines. They are all grown according to the Guyot system. Grapes are harvested and selected by hand. Both red and white wines are fermented at controlled temperature so as to preserve aromaa, scents and fragrances. Once destemmed and crushed by means of a pneumatic press in order to lower the development of tannins and unpleasant vegetal flavours, red wines are fined in oak barrels and barriques; premium white wines in barriques and more commercial white wines and Sangiovese rosé wines in stainless steel vessels. Bottling is carried out in the winery.
